One of my favorite recipes with rolled oats is a very simple and easy done one: You need rolled oats and white breadcrumbs and I prefer them 2:1 to have a crispy result for the little oatmeal burger. Put rolled oats and white breadcrumbs in a bowl, add egg and milk, a pinch of salt, black pepper, cayenne and perhaps parsley and let it rest for about 20 – 30 minutes. It should have a texture similar to beef for burgers: compact enough to form little dumplings with a spoon.
Sizzle them in hot oil in a pan until golden and crispy and serve them warm with cucumber salad and a dip. For the dip mix sour cream and horse radish and perhaps a squeeze of lemon juice.
Those little oatmeal burgers taste well warm and as well as snack and fingerfood. They are perfect for a Fiesta Friday and combined with any other dips (avocado, zucchini, eggplant, pepper cream,….) and crudités.
You may serve them with any salad, vegetables and dips or going along with hot soups or creamy sauces, e.g. mushroom or vegetable soups. And even in a bento or any other lunch box they are perfect for kid’s or office lunch break.
